I'm not sure what more I could say than: If you only buy one book on this subject, this is the one to buy.

Now, has anyone seen/read "Preserving Summer's Bounty" by The Rodale Food Center?

The Best Canning book i have found so far was one i got at a yard sale.

Better Homes And Gardens Home Canning and Freezing 1973 copyright.

Anyway it is the easiest and most wonderful when it comes to explaining things and helping you figure out how to do everything. not to mention it has a ton of recipes. The only thing it doesn't have in it is any of the freezer recipes.
The Joy of Pickling by Linda Ziedrich is a great book for unusual pickle recipes, some of my favorites are Zydeco Green Beans, Pickled Beets with Red Wine, Blueberries Pickled in Molasses, and Minty Watermelon Pickles. Most of the recipes are for small batches (less than six pints) so if your garden isn't large, you don't have to go through the hassle of trying to figure out how to divide the recipe ratios. It has a brief primer in the beginning about basics and processing methods, but as Melody recommended the Ball Book is much better at addressing the techinical stuff. Every summer I see what I have excess of in the garden then go to this book for inspiration. Last year it was Honeyed Jalapeno Pepper Rings, this year it's Lebanese Pickled Eggplant stuffed with Garlic!
I have Preserving Summer's Bounty. I recommend saving your money. It doesn't have all that many recipes and I was surprised that it was lacking in pickle and tomato recipes. I agree with the Ball Complete Book of Home Preserving though. It's MUCH more useful.
