Can anyone tell me how I harvest my mint, can I freeze it or do I have to dry it. Any help would be appreciated. Thanks

I don't know the answer to this but I sure will look forward to what others have to say. I would think that freezing would be the best. I have heard about freezing herbs in ice cube trays which might work with mint. Looking forward to hearing what the answer is.

Hi Luci,
You can both freeze and dry it for later use. For freezing place in ice cube trays and top with water, then store cubes in a zip-lock freezer bag. I prefer to dry mine as my freezer space is limited. There are different drying processes, from laying out on a screen on a sunny day to tying off in bundles and placing paper bag over it prior to hanging in dark dry location (attic, dry basement etc). The benefit of the bag is that it catches any dry parts that may fall off, and also keeps dust away. When storing the dried leaves make sure they are in an air tight container with a small bundle of rice to absorb any excess moisture.

Another suggestion... I keep many of my mints in pots. I overwinter them in my unheated enclosed back porch, and I usually have mint all winter long.
