It's Florence fennel that creates the bulb. Foeniculum vulgar or common fennel is used for foliage and seeds. It's a great plant.

I love having fennel in the garden, this fall I put in some winter fennel and it's beautiful, some of the bulbs are ready now.

Have any of you created or found good recipes for the fennel, especially the bulb? I'd love to hear about them...   Many thanks, and happy growing!

I love fennel bulb and cook it often.  It's nice roasted, either by itself or with other veggies.  It's also nice cooked with potatoes.  Check epicurious.com for nice fennel recipes.

I live in southeast Texas and my fennel is so pretty right now I hate to eat it. Got some nice bulbs going with the florence fennel and very pretty bronze fennel too. I don't know any good recipes for them either. This is really the first time I've grown the florence fennel for the bulb and I tried and tried to grow it last summer here but it couldn't withstand the heat and drought but has done wonderful throughout the winter. I'll post pictures.

Yes, Rhonda is right about the Florence variety.  A fun fennel is what I call black fennel.  It does spread wildly, you MUST be careful where you plant!!  Hope this pic does the plant justice...  Anyone interested in seeds let me know!!  I have a few from last year and can put you down for some when they are reay this year.
