I have never heard of watermelon rind pickles. Have you ever canned watermelon rind either the red or the green part?

I love watermelon pickles! You use the white part. cut off the green and the red.

Have you tried Lime pickles? They are really good too!

I haven't canned in nearly 30 years. Getting started again is exciting and a little unnerving. To prepare, I have just finished planting 10 tomato plants. Last fall I planted only one tomato plant and harvested 60 ripe fruits of 3" or more in diameter. I didn't do any canning, we made so many tomato dishes for Christmas giving and sharing, there were none left.

Are any particular tomatoes best for sauce making?

use roma type. less seeds and water. san marzano are good.
