Good evening, all! Can anyone recommend a good book on canning basics? We got a pressure canner last year but, haven't used it. There is so much conflicting information on the internet and, unfortunately, I don't have my grandmothers around to lend their expertise. I'm afraid of making a mistake and wasting our beautiful homegrown goodies or, worse, making my friends and family ill.

You can visit the National Center for Home Food Preservation website: http://www.uga.edu/nchfp/index.html
They have recipes for fruits, vegetables, pickles and jams and jellies. They also have instructions how to use your pressure canner. They also have info on other food preservation methods.
A friend of mine told me that mason makes a good book on canning. I was going to do some canning myself, and have never done it before. I plan to look it up, and buy it. Good luck!
